Ingredients
For the Potato Shell:

large potatoes

(follow package directions)
For the Filling:

ground beef

diced onion

pomegranate molasses

green pepper

poblano pepper

Instructions
Preheat oven to 375F(200C)
For the Potato Shell:
Peel the potatoes, and add to salted boiling water.
Once fork tender, remove from water and rinse well.
Place potatoes in a large bowl, and add remaining ingredients.
Using a potato masher, combine all of the ingredients.
For the Filling:
Heat 1 tbsp of olive oil in a large saucepan. Add the onions.
Once the onions begin to turn translucent, add the pomegranate molasses.
Let the onions caramalize with the molasses. Add the beef, 1 tsp salt and 1 tsp of allspice.
Once the beef has been browned, add the peppers and pinenuts.
Cook the entire mixture for a few more minutes, until the peppers have softened.
Assembly
Take a 9×5 dish, and either spray with olive oil or butter it.
Take 1/2 of the mashed potato mixture and press it down with your fingers onto the bottom of the pan.
Top with the beef mixture. (You may have a bit left over).
Place the remaining mashed potato mixture on top of the beef, and continue to press down with your fingers.
Cut the dish with a knife- making 12-15 square pieces.
Bake the dish for approximately 35 minutes, and broil for another 5 minutes to get a nice golden crust on top.
Serve warm with a side salad. ENJOY!
