Potato Quinoa Kibbeh with Ground Beef (Kibbeh bil Batatis)

Ingredients
For the Potato Shell:
  • 5 large potatoes
  • 1tsp allspice
  • 1tsp salt
  • 1/2cup milk
  • 1/2cup cooked quinoa(follow package directions)
For the Filling:
  • 1lb ground beef
  • 1tsp allspice
  • 1tsp salt
  • 1cup diced onion
  • 1tbsp pomegranate molasses
  • 1 green pepperdiced
  • 1 poblano pepperdiced
  • 1/4cup pinenuts
Instructions
Preheat oven to 375F(200C)

For the Potato Shell:
  1. Peel the potatoes, and add to salted boiling water.
  2. Once fork tender, remove from water and rinse well.
  3. Place potatoes in a large bowl, and add remaining ingredients.
  4. Using a potato masher, combine all of the ingredients.
For the Filling:
  1. Heat 1 tbsp of olive oil in a large saucepan. Add the onions.
  2. Once the onions begin to turn translucent, add the pomegranate molasses.
  3. Let the onions caramalize with the molasses. Add the beef, 1 tsp salt and 1 tsp of allspice.
  4. Once the beef has been browned, add the peppers and pinenuts.
  5. Cook the entire mixture for a few more minutes, until the peppers have softened.
Assembly
  1. Take a 9×5 dish, and either spray with olive oil or butter it.
  2. Take 1/2 of the mashed potato mixture and press it down with your fingers onto the bottom of the pan.
  3. Top with the beef mixture. (You may have a bit left over).
  4. Place the remaining mashed potato mixture on top of the beef, and continue to press down with your fingers.
  5. Cut the dish with a knife- making 12-15 square pieces.
  6. Bake the dish for approximately 35 minutes, and broil for another 5 minutes to get a nice golden crust on top.
  7. Serve warm with a side salad. ENJOY!
