red cabbage
cored and shredded finely

cups
green cabbage
cored and shredded finely

large
carrots
shredded
3
tomatoes
finely diced
3
scallions
green and white parts
4
sprigs of mint
leaves removed and minced
4
sprigs of parsley
minced

lemons

extra virgin olive oil
Sea Salt
Fresh Pepper
Instructions
Chop all of your salad ingredients, and mix in a large bowl.
Squeeze lemons into the salad, drizzle with olive oil, and sprinkle generously with sea salt and freshly ground pepper. Stir and adjust seasoning. Serve immediately.
