1/2cupcombination of chopped parsley, dill, and coriander(or you can just use whatever you have on hand)
1 1/2cuptomato sauce
1/2tspcumin
pinchsalt
olive oil
Instructions
In a small bowl, combine the fish with the cumin, garlic, salt, lemon juice and dried dill. Be sure that the fish is coated with the marinade. Add a drizzle of olive oil. Set aside while you prepare the sauce.
Preheat oven to 375F (or about 200 C)
In a large saucepan, heat 1-2 tbsp of olive oil. Add the onion and ½ tsp of cumin. Sauté.
Once the onions have softened, add the tomato sauce and the ½ cup of whichever herbs you decide to use (I use a combination of all three). Bring to a rapid simmer, then remove from the heat.
In an oven-proof dish, place the fish at the bottom and top with the sauce mixture. Place in the oven for approximately 25 minutes.
